Factors affecting the domestic pistachio market

Due to international trade restrictions on pistachio imports from Iran, relying solely on the export market may pose a serious challenge to the production of this basic product in the future. At the same time, the entry of imported substitute goods such as hazelnuts, walnuts and cashews into the Iranian market also limits the space for the development of the domestic pistachio market. The present study examined the domestic consumption of pistachios and development strategies in this market. Factors affecting pistachio consumption were estimated using the appropriate functional form and the research variables were analyzed using correlation coefficient and analysis of variance. The statistical population of this study includes all consumers of pistachios in Kerman province (Kerman, Sirjan, Rafsanjan and Anar) as a production hub and Tehran (as a consumption hub). The data of this study were obtained through face-to-face interviews and completing a questionnaire from pistachio consumers which were selected based on income level (low, medium and high income) and based on the population of different urban areas and random sampling method. Number of completed questionnaires in Tehran province and Kerman province Each questionnaire (10 questionnaires in each income category) in each chapter and a total of 8 chapters of information collection, for each of these two provinces, 240 questionnaires have been completed A total of 480 pistachio consumers were interviewed in person. The results showed that familiarity with different cultivars and their degree and quality, household cost, packaging and price of substitute products are the most important factors affecting consumption in the domestic pistachio market. For Kerman province, the absolute value of the calculated price elasticity for roasted and salted pistachios, sliced ​​pistachio powder, pistachio kernels and pistachio nuts has been increased or decreased by more than one in at least one case, which confirms the elasticity or luxury of this The products are for consumers and in the case of other products studied, the absolute value of price elasticity is less than one, which confirms that these products are less elastic or semi-essential. The calculated correlation coefficient between per capita consumption of pistachios with other research variables is positive, which shows the positive trend of increasing consumption in the domestic market. For Tehran province, the absolute value of the calculated price elasticity for pistachios and its products and substitute and complementary goods, at least in one of the cases of increase or decrease in price, is more than one, which confirms the elasticity or luxury of these products for consumption. Are. Only in the case of flavored ice cream or pistachio kernels and some other pistachio complementary products, the absolute value of price elasticity is less than one, which confirms that these products are less elastic or semi-essential. The calculated correlation coefficient between per capita consumption of pistachios with other research variables is positive, which shows the positive trend of increasing consumption in the domestic market. It is suggested to increase the consumption in the domestic market of pistachios by creating the necessary culture through various methods.
